Tampa Bay · the whole exhaust path

What kitchen exhaust cleaning is

Kitchen exhaust cleaning is the job of taking grease off the path that leaves a commercial cook line: canopy, filters, plenum, accessible duct, and exhaust fan. A filter rinse that leaves the fan packed is not that job. Tampa Bay kitchens request it on a volume-based interval, after a finding, or when the roof starts to tell on the fan.

What a complete clean should include

Canopy, grease filters, plenum, accessible grease duct, and the exhaust fan. Write if you also have a make-up air unit that needs attention — that may be extra.

Access panels decide what can be done in one visit. A duct with no panels may need someone to add them before a real clean is possible. Ask the person who calls what they can reach.

What it is not

It is not grease-trap pumping. The interceptor under the sink is a different truck. It is not a polish of the stainless the guests can see. It is not an Ansul inspection or recharge.

Filter swap versus a full clean is the usual scope fight. If a quote comes in at a filter-swap effort for a “complete clean,” ask what they will actually open.

After-hours is the norm in this market

A plaza restaurant that closes at 9 p.m. still cannot have a cleaner on the line at 6. Downtown St. Petersburg, waterfront, and barrier-island kitchens share alleys and roof hatches. Write the close time, whether a manager stays, and how you reach the fan.

Do not send alarm or hatch codes. Write “roof hatch” or “shared alley.”

Honest coverage

St. Petersburg, Clearwater, Brandon, Lakeland, and Sarasota have their own pages. A cleaner still decides travel, especially into Polk County or south to Sarasota. This site is not the crew on the roof.

A licensed local hood cleaner may contact you if they accept the lead. If you already have a cleaner on a route, stay with them unless you lost that stop or need a catch-up after a finding.

Questions

Is kitchen exhaust cleaning the same as hood cleaning?

Hood cleaning is the everyday phrase. Exhaust cleaning is the clearer one — it should include accessible duct and the fan, not only the canopy. Write the scope you want.

Can this be done while we are still cooking?

Usually not well. After-close access is how most of this work is done. Write the close time. We cannot book the slot.

Do you issue a certificate after the clean?

This website does not. Some cleaners leave a sticker or a report. Ask the person who calls. A certificate from a company that only rinsed filters is not worth much to an inspector.

Is this the same as pumping the grease trap?

No. Traps and interceptors are a different trade. This page is hoods, fans, and grease ducts.
